MATCHA (GREEN TEA) JAPANESE CHEESE CAKE

(A)
250g Philadephia cream cheese
50g butter
100ml fresh milk

(B)
60g cake flour
20g corn flour
1 tsp matcha (green tea powder)
*sifted together

(C)
5 egg yolks
¼ tsp salt

(D)
5 egg whites
¼ tsp cream of tartar
120g fine granulated sugar

METHODS:
1. Melt (A) in a double boiler. Cool the mixture.
2. Fold in (B) and (C), mix well.
3. Whisk egg white with cream of tartar until foamy. Add in the sugar gradually and whisk until stiff peaks form.
4. Fold in 1/3 of the whites into the yolk mixture using a rubber spatula till incorporated.
5. Pour the mixture to the remaining egg whites and fold in gently till incorporated.
6. Pour into a 8” round cake pan (lightly grease and line the bottom and sides of the pan with greaseproof paper).
7. Bake cheese cake in a water bath at preheated oven of 160C for 40 mins, reduce temperature to 150C and bake for another 40 mins or till cake is golden brown and until skewer inserted to centre of cake comes out clean.

tips: utk teknik water bath, mama balut cake pan dgn aluminium foil bhgn bwh & keliling 2-3 layers supaya air x masuk ke dlm kek.

APAM POLKA DOT (VERSION LADYBUG)
resepi: amek fr fb kwn mrs nor (mekasih kak nor..halal yek kita c&p resepi akak)

2 biji telur
1 cawan gula
1 sudu kecil ovallete
2 sudu esen vanilla
1 cawan susu segar
2 cawan self raising flour ayak terlebih dahulu
Jem strawberry/blueberry (mama x buh inti)
pewarna yg disukai (mama guna pewarna MERAH, HITAM & PUTIH)

CARA:
1.Panaskan pengukus
2. Pukul telur, gula, esen vanilla dan ovallete hingga kembang dan bewarna putih.
3. Masukkan susu segar, gaul sebati
4. Masukkan tepung, sebatikan
5. Bahagikan adunan kpd 3 bhgn dan warnakan dgn MERAH (adunan plg byk), HITAM (adunan sederhana banyak) & PUTIH (adunan sedkit sahaja). masukkan sebahagian adunan ke dalam 3 pipping bag yg berasingan warna merah, hitam & putih ( i suke guna plastik sandwich jek, potong skit hujung dia)
6. Mula2, masukkan cup kertas ke dlm acuan keras spt acuan muffin/cupcake supaya apam yg dikukus nnti cantik bentuknya x leper.
7. cara2 mencorak LADYBUG: mula2 masukkan adunan warna MERAH 3/4 cup, kemudian lukiskan outline menggunakan piping bag berisi adunan warna HITAM pada bhgn kepala ladybig & garisan tgh (see picture apam). kemudian dot2 kan beberapa dot HITAM atas sayap ladybug. kemudian gunakan sudu kecik ambik sedikit adunan hitam isikan pada kepala ladubug sampai memenuhi outline yg dilukis td. last sekali pipekan 2 dot adunan warna PUTIH tuk mata ladybug & pipe plak adunan HITAM di atas dot putih td tuk biji mata dia (see picture apam). buat sampai abes...
8. Kukus selama 15-20 minit.

tips: kalu nk dptkan shape apam yg lawa & montok2pastikan cup kertas tu dimasukkan ke dlm acuan keras supaya masa dikukus nnti apam tu naik elok tanpa meleper..mama guna acuan muffin.

kek TIRAMISU yg kt atas ni plak mama buat utk bday aiman, anak kwn di cardiff ni, repeat order fr kak shima..last time kak shima order chocolate brownies cheese cake,tqvm



selain kek bday, kak shima jugak order 2 kotak macarons 30pcs mix flavours; rose, choc, green tea & vanilla with maple french butter cream & salted caramel fillings.. plus apam polak dot 33 pcs..alhamdulillah siap jugak sume tempahan tuk majlis ulang tahun aiman yg ke3, happy birthday!!
